INGREDIENTS
  • 4x 500g Lamb Chops
  • 1/2 tbsp Mustard (English or Dijion)
  • 1 tbsp Brown Sugar
  • 1 full head Cauliflower
  • 2 tbsp Double Cream
  • Horse Radish

METHOD

Lamb Chops with Creamed Cauliflower and Carrot Batons

Follow these simple steps to get started 

  1. Pre Heat the oven to either 145 °F(medium rare), 160 °F (medium), or 170 °F (well done) depending on how you want your Lamb Chops cooked.
  2. Apply half a tbsp of English Mustard coated on one side of each Lamb Chop 
  3. Sprinkle over the Mustard 1 tbsp of Brown Sugar
  4. Massage the Mustard and Brown Sugar into the Lamb Chops 
  5. Place the Lamb Chops on a baking tray and put into the oven for 40 Minutes (Do not turn the lamb chops over)

Time to create the delicious sides of Creamed Horseradish Mash and Carrot Batons 

  1. Use a large deep pan to bring salted water to boil over a high heat 
  2. Add the whole Cauliflower and Carrot Baton into the boiling water 
  3. Allow to cook for 5-7 minutes 
  4. Drain the Cauliflower and Carrot Batons
  5. Separate the Cauliflower and Carrot Batons
  6. Remove the stalk of the Cauliflower and cut into small pieces 
  7. Use 2 tbsp of double cream and 1 tbsp of Creamy Horseradish and mix together.
  8. Apply to the Cauliflower and mash togther.
